This year, why not treat Mom by hosting a luncheon in her honor? Do away with the hassles of going to a restaurant on one of their busiest days of the year. You can do a totally make-ahead menu, enabling you to get out of the kitchen and relax and spend time with mom and your guests. Invite as many or as few people as you wish. You could make it an event for the ladies and invite Mom, sisters, aunts, and friends. Or you could make it an intimate occasion with just Mom or your immediate family. And by entertaining earlier in the day, the rest of the day will be freed up for yourself.
A perfect main dish for a luncheon is homemade chicken salad…I have been making the following recipe for years and have even made it in batches to serve 100 for showers. It can be made the day before and is so much better than any pre-made chicken salad from the store…It will knock Mom’s socks off!
2-1/2 c. cooked, diced chicken breast (you can use purchased cooked rotisserie chicken in a pinch)
1 c. chopped celery
1 c. sliced grapes
1 c. cashews
1 t. grated onion
1 t. salt
1 c. mayonnaise
1/2 c. heavy cream
Combine in a large bowl the chicken, celery, grapes, and cashews. In a separate bowl mix together the mayonnaise with the grated onion and salt. In another bowl whip the heavy cream until stiff. Gently fold the whipped cream and mayonnaise mixture together until completely mixed. Gently stir the dressing into the chicken mixture. Put in the refrigerator and let sit for flavors to blend for at least a few hours. To plate, serve mounded atop some pretty, fresh lettuce leaves. This will make 4 – 6 servings.
And what to go with this? There are lots of great options…Everyone always loves a mixed fresh fruit salad. Assorted muffins or tea breads such as banana go well but savory rolls would be a hit too. Think asiago and rosemary or another great combination. Fresh marinated asparagus spears would be wonderful or so would a salad of fresh spinach and strawberries. These are fresh this time of year and would make great additions to your luncheon. And if you wanted to add a vegetarian dish, vegetable quiche or frittata are great options to make ahead as well.
For beverages, mimosas or bellinis would be a special treat for Mom. If the weather is warm, fresh brewed iced tea would be very welcomed. And don’t forget the coffee, too!
